Lunch Simplified: Masala Aloo Sabzi - Spicy Potato Recipe

Hello foodies,

Hot temperatures may sometimes tempt us not to cross over the kitchen threshold and order food from outside. Even though it is very easy to do so with all means within our reach, nothing can beat the goodness, freshness, and hygiene of home cooked food. So, let me inspire you with a picture of my weekend lunch, which took me barely 30 minutes to prepare, yet the end result was sumptuous and good-looking at the same time. 

Lunch includes, Jeera rice, Arhar Dal and Spicy Potato/Masala Aloo sabzi. I have already posted the recipes for the first two on my blog earlier.


A closeup of today's recipe (aloo sabzi):

Ingredients (you will need):

Potatoes boiled and chopped - 2
Salt, to taste
Red Chilli Powder, 1/2 tsp
Green Chillies chopped, 2
Turmeric Powder, 1/2 tsp
Fresh Coriander leaves chopped, 1 tbsp
Amchoor Powder/Khatai/Dried Mango Powder, 1/2 tsp
Garam Masala Powder, 1/2 tsp
Cumin seeds, 1/2 tsp
Asafoetida powder/Heeng powder, a pinch
Refined Oil, 1 tablespoon

Cooking steps:

1. In a pan/kadai, heat some oil and add cumin seeds/jeera and asafeotida/heeng powder. Let them saute and crackle a bit, around 10-20 seconds.
2. Next add chopped green chilies and let them saute for another 20 seconds, taking care not to burn them.
3. Add in the rest of the spices, turmeric powder, red chilli powder, garam masala powder, amchoor powder and saute for another 20 seconds.
4. Add in the chopped boiled potatoes and salt. Mix well. Cook for a minute to allow the spice mixture to coat the potatoes well and the flavors to seep through.
5. Add freshly chopped coriander leaves and stir gently. Switch off the flame.
6. Spicy Aloo Masala is ready to serve. Eat is as an accompaniment dish for your lunch/dinner.
