Eggless Vanilla Cupcakes - Eggless Vanilla Muffins Recipe

Hello foodies,

Today I am sharing a kid friendly recipe, which all kids loved and am sure you loved too as a kid, the good old vanilla cupcakes/muffins. There are a gzillion recipes out there to bake the perfect cupcakes, but I have modified this recipe as per the ingredients available at hand. Also, I don't prefer to use vinegar in my cooking and therefore am always looking for substitutes for the same. 

The recipe I am sharing is good to make 6 soft and moist vanilla cupcakes, so you can increase or decrease the amount depending upon the number of muffins you want to bake in one go. So let's get cooking...


Ingredients (You will need):
Plain flour/Maida, 1.5 cups
Refined oil, 1/4 cup
Plain Yogurt/Dahi, 3/4 cup
Powdered Sugar, 3/4 cup
Vanilla Essence, 1 tsp
Baking powder, 1/2 tsp
Baking soda, 1/4 tsp
Salt, a pinch
Water, 1/4 cup

Cooking Steps:

1. Begin by lining your muffin tray with cupcake liners. I got mine from amazon, you can look for options in your local market as well. Also, preheat your oven at 200 degree celcius.

2. Let's mix the wet ingredients together, yogurt, vanilla essence, oil and water. Whisk them together till the mixture becomes smooth and white.

3. Next, mix/sieve together all the dry ingredients i.e. flour, sugar, baking powder, baking soda and salt.

4. Now mix the dry ingredients into the wet ingredients in two batches gently, do not over whisk. The cupcake batter is now ready to bake.

5. Fill the cupcake liners about 3/4 full using the batter. Place the muffin tray in a preheated oven at 180 degree celcius. Bake the cupcakes for 20-25 minutes or till a toothpick inserted in the cupcake comes out clean.

6. Yummylicious vanilla cupcakes are ready to be devoured! You can serve these with ice cream/with frosting of your choice.
