Sooji/Rava/Semolina Appe - Appam - Paniyaram Recipe

Hello foodies,

Here's giving a healthy start to your new year with a delicious and healthy breakfast recipe known by various names, such as Appe / Appam / Paniyaram. My son loves to carry it in his school lunch and it makes a very sumptuous and nutritious breakfast for the young and old alike. So, let's get started...



Ingredients (you will need):
Capsicum, chopped - 1 small
Sweet corn, boiled and deseeded - 100 gms
Tomato, chopped - 1 small
Salt, to taste
Ground Black Pepper, 1/4 tsp
Musturd seeds, 1 tsp
Curd, 1 cup
Rava/Sooji/Semolina, 1cup
Eno/Fruit Salt, 1 tsp
Oil/ghee, 1 tablespoon

Cooking steps:
1. In a bowl, mix together curd, semolina/sooji, salt and black pepper.


2. Add in the chopped veggies and salt. Mix everything together and let the mixture sit for 5 minutes.


3. Adjust the consistency of the mixture to dropping consistency, not flowing, by adding a little water if required.


4. Place appe/paniyaram mold on stove top and switch on the flame.


5. Add little oil in each mold and allow it to warm up. Add a pinch of musturd seeds in each mold and wait till they splutter.


6. In the mean time, add fruit salt/eno to the batter and mix well.

7. The batter bubbles up slightly, it should look something like shown in the picture below.


8. Pour a spoonful of batter into each mold after the musturd starts spluttering. Fill all the molds with batter and cover the pan and let the paniyaram/appe cook on a low flame till crispy and golden brown.


9. Reverse the appe using a pointy wooden stick/fork gently and add little oil on top of each paniyaram. Cover once again and cook the appe till crispy from below as well.


10. Serve hot with chutney/ketchup of your choice.
