Eggless Banana Chocochip Cupcakes - Eggless Banana Chocochip Muffins Recipe

Hello foodies,

Another sweet treat from me to you! Cupcakes/muffins have been a childhood fantasy of mine and I had been wanting to create something more healthy with fruits and whole wheat for children. Finally, after a few trials and errors I managed to nail down the perfect Eggless Banana Chocochip Cupcakes recipe. So let's get started...


Ingredients (You will need):
Plain flour/Maida, 0.75 cup
Wheat flour, 0.75 cup
Refined oil, 1/4 cup
Milk, 1/2 cup
Powdered Sugar, 1/2 cup
Ripened and mashed bananas, 2
Vanilla Essence, 1 tsp
Cinnamon powder, 1 tsp
Baking powder, 1/2 tsp
Baking soda, 1/4 tsp
Salt, a pinch
Lemon Juice, 2 tsp
Cooking Steps:

1. Begin by lining your muffin tray with cupcake liners. I got mine from amazon, you can look for options in your local market as well. Also, preheat your oven at 200 degree celcius.

2. Add lemon juice to milk and set aside for 10 minutes. Then mix all the wet ingredients together, mashed bananas, milk with lemon juice, vanilla essence, and oil. Whisk them together till the mixture becomes smooth and white.

3. Mix/sieve together all the dry ingredients i.e. flour, wheat flour, sugar, baking powder, baking soda and salt.

4. Now mix the dry ingredients into the wet ingredients in two batches gently, do not over whisk.

5. Gently fold in the chocolate chips in to the batter. Fill the cupcake liners about 3/4 full using the batter. Place the muffin tray in a preheated oven and bake the cupcakes at 180 degree celcius for 20-25 minutes or till a toothpick inserted in the cupcake comes out clean.

6. Super delicious cupcakes are ready to be devoured! Adults and kids will just love it alike. These cupcakes are a good breakfast option for fussy eaters, filled with the goodness of bananas and wheat flour. You can serve these with ice cream of your choice.
