Eggless Red Velvet Cupcakes Recipe

Hello foodies,

Wishing a very happy holiday season to y'all. I am majorly into eggless baking these days with a new found passion and trying out various cupcake recipes. Today, I am sharing my most favorite Red Velvet Cupcake recipe with you (of course Eggless). Though the cupcakes look maroonish, they were quiet red in reality.

Ingredients (You will need):
Plain flour/Maida, 1 cup
Refined oil, 1/4 cup
Milk, 1/2 cup
Powdered Sugar, 1/2 cup
Vanilla Essence, 1 tsp
Baking powder, 1/2 tsp
Baking soda, 1/4 tsp
Salt, a pinch
Lemon Juice, 2 tsp
Water, 1/4 cup
Cocoa Powder, 1/4 cup
Red food colour, 1 tsp

Cooking Steps:

1. Begin by lining your muffin tray with cupcake liners. I got mine from amazon, you can look for options in your local market as well. Also, preheat your oven at 200 degree celcius.

2. Mix lemon juice with milk and let the mixture stand at room temperature for atleast 5 minutes. Then mix the wet ingredients together, milk with lemon juice, vanilla essence, oil and water. Whisk them together till the mixture becomes smooth.

3. Next start adding the dry ingredients, one by one, first goes in the cocoa powder.

4. Next goes in the flour. Mix well.

5. Next add in the baking powder and baking soda along with salt. Mix well.

6. Pour the batter into the cupcake liners. Fill 1/2 to 3/4 of the cupcake liner.

7. Bake in an oven at 180 degree Celsius for 1/2 hour or untill a toothpick inserted in the center comes out clean.

8. The cupcakes are ready!

9. Devour the cupcakes as such or with frosting! Happy baking!
