Gajar Halwa - Carrot Halwa Recipe

Hello foodies,

Another seasonal delight from winters, the good old gajar ka halwa/gajrela as it is called in Punjab. I have loved it since my childhood and this was one sweet, which I couldn't do without. So let's get started and prepare this awesome sweet...


Ingredients (You will need):
Carrots, 1 kilogram
ghee/clarified butter, 1/2 cup
Full cream milk, 1 litre
Sugar, 1 cup
Almonds chopped, 10-20
Fresh cream, 2 tbsp

Optional:
Cardamom seed/ilachi powder

Cooking Steps:

1. Wash, peel and grate the carrots.

2. In a kadai/thick bottomed vessel, add the carrots and milk. Start cooking the halwa on a medium flame.

3. The carrots will start cooking and absorb the milk. We have to monitor this process from now on giving the mixture a stir after every 5 minutes till the milk and carrot mixture has thickened.

4. As seen below the mixture has reduced to half its consistency, but still a long way to go.

5. I am adding 1 cup sugar as the carrots are also naturally sweet, but you can totally add or reduce the amount of sugar based on your personal liking for sweetness. The sugar will melt and increase make the mixture more fluid again, so just keep a watch and keep stirring the halwa every 5 minutes.

6. Once the moisture from sugar evaporates add in the ghee.

7. Add in the chopped nuts.

8. Add in some fresh cream and let it blend well with the halwa.

9. You can see the moisture completely evaporated in the picture below. Turn off the flame and take the pan off the stove.

10. Serve hot. You can also add some grated nuts as garnish.
