Kakdi Sabzi - Snake Cucumber Vegetable Recipe

Hello foodies,

With the onset of summers in India, we get a variety of lovely fresh water containing vegetables and fruits for all of us to relish and to beat the sweltering heat. One of such popular salad vegetable is kakdi or snake cucumber. It is available throughout the northern parts of India in summer and is primarily eaten raw as salad. But today, I am sharing a savory recipe where we eat this lovely salad vegetable as a vegetable.



Ingredients (you will need):

Kakdi/Snake Cucumber, chopped - 200 grams
Salt, to taste
Red Chilli Powder, 1/2 tsp
Turmeric Powder, 1/2 tsp
Coriander Powder, 1 tsp
Amchoor Powder/Khatai/Dried Mango Powder, 1/2 tsp
Garam Masala Powder, 1/2 tsp
Cumin seeds, 1/2 tsp
Asafoetida powder/Heeng powder, a pinch
Refined Oil, 1 tablespoon

Cooking steps:

1. Wash and cut the kakdi/snake cucmber in small pieces.

2. Place a pan over medium flame and add 1 tbsp oil in the pan. After a minute or so, add the spices one by one, cumin seeds, asafoetida powder, turmeric powder, red chili powder, and coriander powder. Let the spices saute for a minute or so.

3. Add the kakdi to the pan and stir in with the spices.

4. Add salt to taste and mix. Cover and cook the vegetable on low flame for 5 minutes or till the kakdi is soft and tender.

5. Add khatai/amchoor powder once the kakdi is cooked. Stir in well and remove the pan from the flame.

6. Delicious kakdi is ready to be served with rotis/phulkas.
