Today I am sharing a recipe, which is the favorite of children and adults alike in most north Indian households (especially mine), spicy chole or chole masala to be eaten with fluffy bhature. Now who doesn't like this one? Even though the recipe I am sharing is without onion and garlic it would taste just as awesome. Do try it and enjoy with your family and friends.
Ingredients (you will need):
Safed Chana/Chickpeas - 1 cup
Salt, to taste
Red Chilli Powder, 1 tsp
Turmeric Powder, 1/2 tsp
Amchoor Powder/Khatai/Dried Mango Powder, 1 tsp
Garam Masala, 1 tsp
Cumin/Jeera seeds, 1/2 tsp
Black salt/Kala Namak, 1/2 tsp
Ripe Tomatoes, 2
Asafoetida powder/Heeng powder, a pinch
Dried Fenugreek leaves, 1 tsp
Ghee/Clarified butter, 1 tablespoon
Anardana powder/dried pomegranate seeds powder, 1 tsp
Dried Indian gooseberry powder/dried amla, 1 tsp
Cooking steps:
1. Soak the washed chickpeas/safed chana overnight. Boil in a pressure cooker in the morning
2. In the morning, throw away the water and pressure cook the soaked rajma in fresh water for 15 minutes or till they are completely cooked.

2. Switch on the flame of your stove, place a pan, add ghee or clarified butter. Once it is hot, add cumin seeds. Cook till they are fragrant.
3. Next, add the remaining spices, red chili powder, coriander powder, garam masala powder, turmeric powder. Saute the spices for 20 seconds. Take care so as to not let the spices burn.
4. Next add the chopped tomatoes. Cook till the tomatoes are soft though not mushy.
5. Next add khatai/dried mango powder, amla powder, and anardana powder.
6. Add salt and black salt. Cook for another minute.
7. Add dried fenugreek leaves and cook for another minute or so.
8. Finally add this cooked masala to the boiled chana/chickpeas and stir well. Cook the chana/chickpeas on a low flame (for about 15 minutes) till the chana absorbs the flavor of the spices. At this point, you can adjust the amount of salt as per your taste.
9. Delicious masala chole/ spicy chickpeas are ready. Serve them hot with fluffy bhaturas for a sumptuous breakfast/lunch/dinner.
