Diwali 2017: Masala Aloo Sabzi - Methi Wale Aloo - Halwai Wale Aloo - Bedmi Wale Aloo - Spicy Potato Curry Recipe

Okay, so for today I generally prepare a heavy breakfast as the entire family gets super busy with the Diwali pooja and rangoli preparations that Lunch is usually missed. So, let's prepare a hearty and heavy Diwali breakfast which takes very less time to prepare but is tasty nonetheless! 

The highlight of this Breakfast is the Methi Wale Aloo/Halwai wale aloo/bedmi wale aloo which is generally prepared as breakfast in baniya households during festivities as well as weddings. This potato curry is served with fluffy pooris/bedmis and halwa and raita but today I am preparing it as is with fluffy ajwain/carrom seed puris.

Ingredients (you will need):

Potatoes, 100 grams
Salt, to taste
Red Chilli Powder, 1 tsp
Turmeric Powder, 1/2 tsp
Amchoor Powder/Khatai/Dried Mango Powder, 1 tsp
Methi/Fenugreek seeds, 1 tsp
Coriander Powder, 1 tbsp
Saunf Powder, 1 tsp
Asafoetida powder/Heeng, a pinch
Dried Fenugreek leaves/Kasuri Methi, 1 tsp
Ghee/clarified Butter, 1 tablespoon
Water, as required

Cooking steps:
1. Peel and wash the potatoes properly. Next cut them in roundels as shown below.

2. Heat a pressure cooker, add ghee and then add methi/fenugreek seeds and asafeotida.

3. Let the seeds turn slight brownish and then add all the spices (except amchoor powder) and the potatoes.

4. Add salt and kasuri methi.

5. Stir in the potatoes really well. Add enough water to cook the potatoes and not make a very runny gravy. I have added around 75 ml of water.

6. Pressure cook the potatoes till done. I generally cook the curry/sabzi on a low flame for 10 minutes after the first whistle. Let the steam subside and open the pressure cooker. At this stage check the potatoes for doneness and add the amchoor powder. Stir well.

7. The masala aloo sabzi is ready. You can serve it with accompaniments of your choice, pooris, bedmis, lachcha parantha or any other flatbread.
