Karare Aloo Bread Pakode - Homemade Bread Pakode - Crispy Potato Stuffed Bread Fritters Recipe

Hello foodies,

Winters have set in and the typical breakfast at my home is something fried and crispy. Today for breakfast I made some crispy aloo stuffed bread pakode. People of all age groups, be it oldies/young ones, love these pakodas and it's a very common street food as well as a breakfast food throughout India. There are a few variants of bread pakodas which include an additional layer of cheese/paneer slice along with the aloo filling. Today, I am making simple homemade style bread pakodas. So let's get cooking!

Ingredients (you will need):
Potatoes, boiled - 2 small
Bread slices, 4
Green Chilli, chopped - 1 small
Coriander leaves, chopped - a handful
Salt, to taste
Cumin seeds/Jeera, 1/2 tsp
Besan/Chickpea flour, 1 cup
Red chili powder, 1/2 tsp
Garam Masala Powder, 1/2 tsp
Amchoor Powder, 1/2 tsp
Chaat Masala, 1/2 tsp
Baking soda, 1/4 tsp
Water, as required
Oil/ghee, for frying



Cooking steps:
1. In a bowl, mix together besan, cumin seeds, salt, 1/4 tsp red chili powder, baking soda, chopped fresh green chili and coriander leaves. Simultaneously, keep a kadai/wok with sufficient oil on the gas flame for heating.

2. Add water to make batter. Take care so that the batter is neither too thick or too runny. It should flow smoothly.

3. For preparing the stuffing, grate the boiled potatoes and add salt, 1/4 tsp red chili powder, amchoor powder, chaat masala and garam masala.

4. Mix well and the stuffing is ready.

5. Take two bread slices and spread the prepared stuffing on one of the bread slices.

6. Cover with the other slice and cut in the desired shape. I have made four triangles, You can make two triangles for bigger pakodas or even square shaped pakodas.

7. For making the pakodas more crispy and yummy, pour 1 tbsp of the hot oil from wok/kadai into the batter. Mix well.

8. Place one of the stuffed bread sandwich into the batter and evenly coat it from all sides.

9. Place the pakoda/fritter into the hot oil for frying till golden brown on all sides if you are serving immediately.

10. Another tip to obtain super crispy pakodas, fry the pakodas half way through and refry them once more just before serving to get a super crispy bread pakoda. The picture below shows, doubly fried pakodas at the front and lightly fried pakodas and the back. See the difference in colour and texture of the pakodas.

11. Serve the steaming hot pakodas with accompaniments/chutneys of your choice. I have served here with green chutney, you may use ketchup/saunth/imli chutney of your choice.
