Apple Cinnamon Muffins / Cupcakes

Hello foodies,

This lockdown has inspired us to spend more time with our loved ones and home. What better way than to enjoy all the goodness of home-cooked food with family.

To insert something healthy into the desserts has always been my intention as a mother and this week I made apple cinnamon cupcakes to achieve the same.

A bonus to making these cupcakes was that the house smelled amazing afterwards!



Ingredients used:
Plain flour/Maida, 1 and 1/4 cups
Refined oil, 1/4 cup
Plain Yogurt/Dahi, 3/4 cup
Powdered Sugar, 1/2 cup
Vanilla Essence, 1 tsp
Baking powder, 1/2 tsp
Baking soda, 1/4 tsp
Salt, a pinch
Water, 1/4 cup
1/2 apple (grated or cut into very small cubes)
cinnamon powder 1 and 1/2 tsp

For decoration:
Chocochips, 1/4 cup
Whipped cream

Cooking Steps:

1. Begin by lining your muffin tray with cupcake liners. Also, preheat your oven at 180 degree celcius.

2. Let's mix the wet ingredients together, yogurt, vanilla essence, oil and water. Whisk them together till the mixture becomes smooth and white.


3. Next, mix/sieve together all the dry ingredients i.e. flour, sugar, baking powder, baking soda and salt.

4. Cut half an apple into small cubes (you can grate as well if you wish).

5. Mix the dry ingredients into wet ingredients and add apple and cinnamon in the end.

6. Fill the cupcake liners with the batter and bake the muffins for 20 minutes at 180 degree celcius.



7. Cool down the muffins to room temperature before decorating them with whipped cream and chocochips.
